Chicken Curry

The basic chicken curry can be made with a variety of vegetables. Why do we use only basic spices? Such as salt, ground red chilies, coriander, and turmeric, we allow the true flavours of the dish to shine through. These spices serve to enhance and complement the natural taste of the ingredients. By keeping the spice combination simple, we ensure that the flavours are well-balanced. This curry is typically prepared with a bit more gravy, so you're encouraged to add water according to your preference. However, it also lends itself well to a drier preparation.

Chicken Curry

Ingredients

  • 1 baby chicken, cut into curry pieces
  • 2 medium-sized onions, chopped
  • 1 tomato
  • 8 cloves of garlic
  • Salt and spices to taste
  • Chopped green coriander for garnish

Method

    In a pot, add chopped onions and enough water to cover them. Also, add the tomato and salt.

    Bring the mixture to a boil, then cover the pot and let it simmer on low heat for about half an hour or until the onions are tender.

    Stir in the spices, including turmeric, ground coriander, and ground red chillies. Cook for 10 to 15 minutes until the onions and tomatoes are well mixed.

    Add the chicken to the pot and continue stirring for another 10 to 15 minutes. Pour in half a cup of water, cover the pot, and let it cook on low heat until the chicken is tender.

    Once the chicken is cooked, garnish the curry with chopped green coriander.

    Serve the chicken curry with rice, naans, or chapati.
