Panjeri

Ingredients

  • 1 cup of polenta (cornmeal)
  • 1/4 cup of sugar
  • Oil (for frying)
  • 1/2 gram of almonds ground (optional)
  • 1/2 gram of cashew nuts ground (optional)
  • 1/2 gram of melon seeds ground (optional)

Method

    Heat a frying pan over medium heat and add some oil.

    Pour 1 cup of polenta into the pan and stir continuously to prevent lumps. Cook on low heat for about 30 minutes until it turns slightly golden brown, stirring frequently.

    Once cooked, add 1/2 cup of sugar. Stir well to combine.

    Continue stirring for about 10-15 minutes, allowing the sugar to melt and coat the polenta evenly.

    Grind almonds and cashew nuts separately until they form a coarse powder.

    Add the ground almonds and cashew nuts to the pan. Stir well to incorporate.

    Keep stirring for an additional 10 minutes, ensuring all ingredients are evenly distributed and well-cooked.
