🫘 Lentils (Daal)
Orange Tarka Daal
By using orange or red lentils, the cooking time is significantly reduced. Substituting butter with oil is a suitable option for those who prefer oil. This recipe has been a favourite of mine since I was younger.
Ingredients
- 250g orange or red lentils (masoor dal)
- 2 medium onions, chopped small
- 6 cloves of garlic, chopped small
- 1/2 tsp turmeric powder
- 1 tsp ground coriander

- Salt, to taste
- Water
- Cooking oil
- 1/2 of a small onion, chopped small (for frying)
- 4 cloves of garlic, chopped small (for frying)
Method
- 1
Rinse the orange or red lentils thoroughly under running water and drain. Soak in water for 20 minutes.

In a pot add salt, water, the chopped onions and garlic. Leave covered on low heat for 15-20 minutes.
- 3
Add the rinsed lentils to the pot and stir to combine with the onions and garlic.
- 4
Add turmeric powder, ground coriander, and red chilli powder over the lentils. Stir well to coat the lentils in the spices.

Pour enough water into the pot to cover the lentils. Bring to a boil.
- 6
Reduce heat to low, cover the pot, and let the lentils simmer for about 15 minutes or until they become soft and mushy.

5-7 minutes before the lentils are cooked, add chopped green coriander. Put oil in a frying pan, heat up, add the half onion and garlic chopped small. Fry till brown, add to pot and stir in well. Cover and switch off cooker.
