Bhuna Meat (Buja Meat)
By using the term "bhuna" or "buja," it indicates that the meat should be cooked in a curry-like style without the addition of extra water to make a runny gravy. A rich, dry-style curry with concentrated flavours.

Ingredients
- 1 kg sheep or lamb meat
- 3 to 4 medium onions, finely chopped
- 3 tomatoes, chopped in half
- Salt, to taste
- 1/2 teaspoon turmeric
- 1 tsp ground red chillies
- 1 teaspoon ground coriander
- 1/4 teaspoon garam masala
- Chopped coriander leaves for garnish
- Oil
Method

In a pot, combine the sheep or lamb meat, chopped onions and diced tomatoes.

Season with salt to taste, excluding the spices, and bring the mixture to a boil.

Cover the pot and simmer on low heat until the meat becomes tender.

Increase the heat to high, add oil and spices. Cook while stirring until the mixture blends together.

Cover the pot and let it simmer on low heat for an additional 10 to 15 minutes.

Serve the flavourful sheep or lamb curry garnished with chopped coriander leaves.
