Karahi Meat
Karahi just means wok in South Asian cuisines. So, a karahi dish like meat or chicken is essentially cooked in a wok with some onions and tomatoes visible. On the streets of Pakistan, you often see shop workers cooking these dishes out in the open, not inside the shops.
Ingredients
- 1 kg meat (sheep or lamb)
- 3 medium-sized onions, sliced
- 3 tomatoes, sliced
- Oil
- Salt, to taste
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp ground red chilli
- 2 green chillies (optional)
- Chopped coriander leaves
- 8 cloves of garlic, crushed into a paste
Method

Heat oil in a wok (karahi) over medium heat.

Add the sliced onions and tomatoes to the wok with oil and cook for about 15 minutes until they soften.

Sprinkle salt, turmeric powder, coriander powder, red chilli powder, and garlic paste over the onions and tomatoes. Stir well to combine the spices.

Add the meat to the wok and cook, stirring continuously, until the meat is well coated with the spice mixture.

Reduce the heat to low and cover the wok. Let the meat cook slowly until it becomes tender, adding water as needed to prevent it from drying out.

Once the meat is tender, turn off the heat and garnish with freshly chopped green chillies and coriander leaves.

Serve the karahi hot with roti, rice, or salad.
