Meat and Green Pepper Curry
A flavourful curry combining tender sheep or lamb meat with fresh green peppers. The peppers add a lovely freshness and slight crunch to the rich meat curry.

Ingredients
- 1 kg sheep or lamb meat
- 3 medium onions, finely chopped
- 3 tomatoes, diced
- 2 to 3 green peppers, deseeded and cut
- Salt, to taste
- 1/2 tsp turmeric
- 1 tsp ground red chilli
- 1 tsp ground coriander
- 1/4 tsp garam masala
- Chopped coriander leaves for garnish
- Oil
Method

In a pot, combine the sheep or lamb meat, chopped onions and diced tomatoes.

Season with salt to taste, excluding the spices, and bring the mixture to a boil.

Cover the pot and simmer on low heat until the meat becomes tender.

Increase the heat to high, add oil and spices, cook while stirring until the mixture blends, add the green peppers and stir.

If needed, add a little water to maintain the desired consistency. Cover the pot and continue cooking for an additional 5 minutes.

Serve the flavourful sheep or lamb curry garnished with chopped coriander leaves.
