Chicken Pilau

A simple and flavourful chicken pilau using the traditional dham method. The lemon adds a wonderful freshness to the rice.

Chicken Pilau

Ingredients

  • 1 baby chicken, cleaned and cut into curry pieces
  • 2 small onions, sliced
  • Salt to taste
  • Cooking oil
  • 2 tbsps garam masala
  • 2 tbsps cumin seeds
  • 600g of rice
  • 1,280g of water
  • 1 lemon

Method

    In a large pot, heat some oil over medium heat and add the sliced onions. Cook until they turn brown.

    Add salt and 1/2 cup of water. Cover and reduce heat to low, letting it cook until the water has dried up.

    Add the chicken pieces. Stir and cook for about 15-20 minutes.

    Stir in the garam masala and cumin seeds.

    Add 4 cups of water. Cover and simmer over medium heat for 15-20 minutes. The longer it simmers, the tastier it will be.

    Drain the soaked rice and add to the pot. Check seasoning and add more salt if needed.

    Cover and continue to cook on medium heat until most of the water has been absorbed.

    Squeeze in the juice of one lemon, then cover again. Reduce heat to low and let the rice steam (dham) for 8 minutes on one side, then 8 minutes on the other side.

    After steaming, turn off the heat and let rest for at least 10 minutes before serving. This allows the flavours to blend and the rice to fully absorb any remaining liquid.
