Achar Masala
Achar Masala is an Indian spice blend inspired by the flavours of pickles, or "achar". A tangy, spicy, and aromatic blend perfect for curries, stir-fries, and rice dishes.

Ingredients
- 2 tablespoons fennel seeds
- 2 tablespoons coriander seeds
- 1 tablespoon fenugreek seeds
- 1 tablespoon cumin seeds
- 1 tablespoon mustard seeds
- 1 tablespoon nigella seeds
- 1 teaspoon turmeric powder
- 1-2 teaspoons red chilli powder (adjust to taste)
- 1 teaspoon asafoetida (hing)
- Salt to taste
Method

Add the fennel seeds, coriander seeds, fenugreek seeds, cumin seeds, mustard seeds, and nigella seeds to a grinder and grind them into a fine powder.

Transfer the ground spices to a bowl and add the turmeric powder, red chilli powder, asafoetida, and salt. Mix well to combine.

Store your Achar Masala in an airtight container to keep it fresh.
