Pakoras
Imagine it is early evening outsideands it's raining, you are thinking of having a cup of tea but you don't know what to have with it. Then you remember — of course, it's pakoras! Crispy, golden fritters made with gram flour, onions, and potatoes.
Ingredients
- Gram flour (also known as chickpea flour or besan)
- 2 onions, thinly sliced
- 2 large potatoes, thinly sliced in long strips or half circles
- Salt and chillies, to taste
- Crushed whole coriander seeds
- Oil for frying
Method

In a mixing bowl, combine the sliced onions, sliced potatoes, salt, chillies, and crushed coriander seeds.

Gradually add enough gram flour and water to the bowl, mixing well, until the mixture forms a sticky batter that coats the onions and potatoes.

In a wok or deep fry pan, heat oil on medium-high heat.

Once the oil is hot, take small portions of the batter using a tablespoon and carefully drop them into the hot oil.

Fry the pakoras until they turn medium brown on both sides. This should take a few minutes. Ensure they are cooked evenly by flipping them occasionally.

Once the pakoras are golden brown, remove them from the oil using a slotted spoon or tongs and place them on a plate lined with paper towels to absorb excess oil.

Repeat the process with the remaining batter, frying the pakoras in small batches.

Serve the pakoras hot as a snack or appetiser, along with the chutney of your choice.
