Basic Curry Recipe
This basic curry recipe serves as a versatile base for a wide range of dishes, allowing you to incorporate different proteins like chicken, beef, or tofu, and a variety of vegetables. This curry can also be enjoyed on its own, served with naan bread, rice, or chapatis for a simple and comforting meal. The beauty of this recipe lies in its flexibility - feel free to experiment with different spices, herbs, and ingredients. My kids love this tasty dish with chapati or pilau.
Ingredients
- 2 medium-sized onions, sliced
- 8 cloves of garlic
- 2 tomatoes, finely chopped
- Salt, to taste
- Ground red chillies, to taste
- 1 tsp turmeric powder
- 1 tsp ground coriander (homemade is best)
- Coriander leaves, chopped, for garnish
- Oil for cooking
- Water

Put the sliced onions in a pot and add enough water to mostly cover them. Add salt, garlic, and tomatoes. This basic curry masala recipe does not include garlic, as I am preparing it for okra, a dish that typically doesn't call for garlic.

Bring the water to a boil, then reduce the heat to low and cover the pot. Let everything cook until the onions and tomatoes are tender.

After the onions and tomatoes are tender, increase the heat to high. Stir the mixture and add the ground red chillies, turmeric, and ground coriander. Add oil and continue stirring until everything is well mixed and most of the tomatoes and onions have dissolved.

Add the chopped coriander leaves, stir to combine, then cover the pot again. Reduce the heat to low and let the curry cook for another 10 minutes. If it looks like it's drying out, add a little more water. After this step, you can add a variety of ingredients to enhance your dish.
