Bitter Gourd (Karela)

Ingredients

  • 1kg bitter gourd (karela), cut in half lengthwise, deseeded, and cut into small pieces
  • 6 large onions, chopped
  • 3 medium-sized tomatoes
  • Salt, to taste
  • 1/2 tsp turmeric
  • 1 tsp ground coriander
  • 1 tsp ground red chillies

Method

  1. 1

Wash the bitter gourd pieces with water and salt to take away the bitterness.

  2. 2

Heat some oil in a pan and add the chopped onions and the chopped tomatoes. Cook them on low heat until they become tender.

  3. 3

Once the onions are tender, add the turmeric, ground coriander, and red chillies. Stir well to combine the spices with the onions.

  4. 4

Add the chopped bitter gourd to the pan and stir everything together. Let it cook for about 15-20 minutes, stirring occasionally.

  5. 5

Meanwhile, dice the tomatoes and add them to the pan. Continue to cook until the bitter gourd is cooked through and tender.

  6. 6

Adjust the seasoning with salt and spices according to your taste.

  7. 7

Once the bitter gourd is cooked and the flavours have mixed together, the dish is ready to be served. You can enjoy this dish as a side dish or a main course with steamed rice, chapati, or any other bread of your choice.
