Okra Special

Okra needs to be washed and thoroughly dried before cutting, as its interior can become quite sticky. Additionally, when cooking okra, it's important to stir minimally to avoid activating its natural viscosity.

Ingredients

  • 1 kg okra, washed, dried, and chopped into 1/4-inch pieces
  • 6 medium-sized onions, finely chopped
  • 2 tomatoes, finely chopped or pureed
  • Ground red chillies, to taste
  • Salt, to taste
  • 1 tsp turmeric powder
  • 1 tsp ground coriander (homemade - check recipe in the spice blend section)

Method

    In a large pan, add the chopped onions, tomatoes, ground red chillies, salt, turmeric powder, and homemade ground coriander.

    Add enough water just to cover the onions and tomatoes.

    Put the pan on low heat and cook until the onions and tomatoes become tender and the spices are well-integrated.

    Increase the heat to medium and stir the mixture. Continue cooking and stirring until most of the onions and tomatoes have dissolved, and the mixture becomes like a thick paste.

    Add the chopped okra to the pan and stir well for about 10 minutes to ensure all the okra pieces are coated with the spice mixture. Be gentle while stirring to keep the okra pieces intact.

    Reduce the heat to low again, cover the pan, and let it cook for 5 to 10 minutes.

    Check the okra. It should be tender but not squashed. If it's still a bit firm, cover and cook for a few more minutes.

    Once the okra is cooked to your preference, give it a final stir, turn off the heat, and let it sit for a couple of minutes before serving.

    Serve your spicy okra dish with warm roti or rice.
